About Carrots For Lunch

My transition into healthy living started many years ago. I must have been around 18 years old when I first started to fully comprehend the concept of health, holistic and green living. Fast forward several years and here I am today. On a continuous journey of learning and understanding whole foods, body functions and reactivity’s to food.  I converted slowly from a meat and grain based diet into a vegan and grain free diet. After discovering a few months prior I had Celiac ( a condition that enables you from consuming gluten), I had to re structure my diet. At first, I didn’t take it too seriously but after being fed up of a whole array of stomach problems, I did a 180 on my nutrition. I found ways to avoid eating gluten, creating recipes that were identical to the great foods we love to eat such as breads, bagels, muffins and drumroll.. DONUTS!

That being said, after cutting out any sort of gluten, I have absolutely no stomach problems. I started to adhere to a paleo diet. With a combination of regular exercise which for me is running, yoga and my ultimate heart and soul: muay thai, my body has never felt better.  I hope this blog can help anybody who may be trumped on food ideas for grain free, organic and GMO free recipes.
